Strawberry Rhubarb Cake

Ingredients
  

  • 3 eggs
  • 2 cups sugar
  • 3/4 cup butter (softened)
  • 1 tsp vanilla
  • 2 cups all-purpose flour (see below for gluten-free alternative)
  • 2 cups strawberries (washed, dried as much as possible, and chopped very small)
  • 1 cup rhubarb thinly sliced and chopped

Instructions
 

  • Preheat oven to 350 degrees. With a mixer, beat the eggs with the sugar until slightly thickened and light in color, about 5-7 minutes. The mixture should almost double in size. The eggs work as your leavening agent in this recipe, so do not skip or shorten this step. This mixture should form a ribbon when you lift the beaters out of the bowl.
  • Add the butter and vanilla; mix two more minutes. Add the flour and mix until just combined. Add the rhubarb and strawberries and stir to mix throughout.
  • Spread in a buttered 9x13 pan. Bake for 40-50 minutes, or until very lightly browned and a toothpick inserted near the center of the cake comes out clean. (43 minutes typically works for me.) Let cool completely before cutting into small slices. Enjoy!

Notes

Gluten Free Substitution: 1 ¼ cup brown rice flour + ½ cup potato starch + ¼ cup tapioca starch + 1 teaspoon xanthan gum may be substituted for the amount of all-purpose flour listed in the ingredients above.

Ingredients
  

Salad Base

  • 2 bunches raw spinach (washed, drained, and torn apart)
  • 1 cup fresh strawberries (washed and cut in half)

Salad Dressing

  • 1/2 cup sugar
  • 1 tsp dry mustard
  • 1 tsp salt
  • 1/2 tsp celery seed
  • 3 Tbsp grated onion
  • 1 cup vegetable oil
  • 1/3 cup wine vinegar (e.g. red wine vinegar)

Instructions
 

  • Mix sugar, mustard, salt, celery seed, onion, oil and vinegar.
  • Pour over spinach and strawberries just before serving.  Toss to mix well.

Quick and Easy Angel Food Berry Cake

Angel berry food cake is a simple and delightful dessert that brings together light and airy angel food cake with a burst of fresh berries.
Course Dessert

Ingredients
  

  • 1 8-9" round angel food cake (prepared)
  • 1 14 oz can sweetened condensed milk (NOT evaporated milk)
  • 1/2 cup ReaLemon lemon juice concentrate
  • 1.5 cups fresh berries (e.g. strawberries, raspberries, blueberries, blackberries)
  • powdered sugar (optional)

Instructions
 

  • With a serrated knife, cut a 1 ½ layer off the top of the cake. Lift off and set aside.
  • With a fork, carefully hollow out the middle, leaving about ½ to ¾ inch cake on sides and bottom. 
  • In a bowl, mix together condensed milk and lemon juice until thickened.  Spoon into the cake shell.
  • Spoon berries over the mixture and replace the cake top. 
  • Cover and chill for at least 4 hours.
  • Just before serving, sprinkle with powdered sugar and garnish with fresh fruit if desired.
